Single hop focused beers can be a great exercise in what exactly hops do to a beer, but they can also just be finely crafted brews that simply benefit from the nuances of hop flavors. Here, Terrapin Beer Co. is using the so-called "wonder hop" called Mosaic. The beer pours a crystal clear garnet color, while khaki foam forms up and subsides at a medium pace. Aromas are dominant with big fruit-forward citrus and sweet floral nectar. It hits with a gritty hop character up front, moves to a sweet and spicy rye flavor mixed with stone fruit, and ends with a lingering sweetness. Juicy hop flavors come back into play at the end. It has a high-than-normal malt backbone, which is nice to see, and supports all the things that Mosaic is doing here. An excellent springtime treat.
